I am a dork.
My munchkins were sick so I started creating in the kitchen again. This recipe actually turned out pretty good. It is just a Cinnamon cake. We liked it without icing but I put some on there anyway. See if this sounds good to you:
Ingredients:
2 1/4 cup flour
4 eggs room temperature
1 stick of butter softened to room temperature
1 1/2 cups brown sugar
1 cup whole milk & 1/2 cup vanilla creamer ( or 1 1/2 cup whole milk)
1 tablespoon baking powder
1/2 teaspoon salt
1 tablespoon Vanilla extract
1 tablespoon Cinnamon
1/4 teaspoon nutmeg
Preheat the oven to 350.
Butter the pan that you will be using. If you are going to put down wax paper on the bottom I would butter that as well.
Then I put the eggs, butter and sugar in the mixer and beat them up on medium speed till they were really silky then I added the rest of the ingredients one at a time till it was a nice creamy mixture.
Pour into your prepared pan.
Put on middle rack of your oven.
Bake for 30-35 minutes or until you can put the toothpick in the center and it comes out clean.
Take it out and let it cool.
If you want the icing we used it is so bad for you but it tastes good.
Ingredients:
1 stick of butter room temperature
2 cups powdered sugar
1/2 cup of powdered cocoa mix
splash of vanilla creamer
Beat them together and yum!
Well our family really liked this concoction.
Aimee says that it is delicious.
She likes the icing the most.
