I am having fun trying new cookie recipes. I just made this one last night it is really good!
Need:
2 sticks of butter
1 cup white sugar
3/4 cup brown sugar
2 teaspoons vanilla
1 egg
1/2 cup cocoa
1/2 cup peanut butter (organic)
2 3/4 cup flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 bag of peanut butter chips
Cream together the butter and sugars till they are smooth. Then add the vanilla, egg, cocoa and peanut butter. They will be creamy too. Add 1/4 cup of the flour at a time to the mixture. Usually about half way through the flour I add the baking soda and baking powder.
I know you could mix the dry ingredients first, but that just dirties another bowl in my opinion. I am sure there is a good reason to do that if you would like to...then go for it. Me? I will stick with my less clean up method. If it ain't broke don't fix it right?
Anyway, now the dough is mixed and you can add the peanut butter chips. Mix them all the way through. Your oven should be hot now so you can roll up table spoon size balls of the dough and place them on your baking sheet about 2 inches apart. These don't really widen out a bunch but they do get puffy. Let them cook in the oven for about 10 minutes depending on your oven. Then let them cool on the baking sheet for a minute before taking them off.
